If you’ve never had a tortilla that was heated on an open gas flame, you haven’t lived. The magic is in the charred bits. You need to know just when to flip it.

And yes, you MUST use your hands to flip it. That’s part of the experience. If you do it right, each bite will have the satisfying flavor of equal parts char and equal parts danger!
